At a recent event for i-Chef, a new digital hub for suppliers to caterers and chefs, respected chef Richard Corrigan of of Corrigan’s Mayfair, Bentley’s Oyster Bar and Grill and Bentley’s Sea Grill talked to the audience about the importance of choosing the right small suppliers for your business.

“What makes hotels, restaurants, bars, bistros and brasseries successful is our suppliers … I made my name and I made my money dealing with small suppliers. It’s that relationship that keeps our businesses so strong, so successful …. I take incredible interest in dealing with growers, small farmers, oystermen, day boats… At this moment in time, believe it or not, I have a small oyster supplier from the West Coast of Ireland coming over me at Bentleys with a small box of oysters. Colchester, Mersea, Helford, Loch Fyne in Scotland. Reg Johnson – I keep saying to him that his chickens are some the best chickens you can taste in Britain or France. He’s fantastic. His goose and ducks and chickens are just unbelievable good. … “
