This month I wanted to share my inside track on some of the niche and specialist companies who have signed up for  i-Chef, a new digital hub that hooks up recommended suppliers to caterers and chefs. Here I am with my old friend Sarah Howard from the Royal Academy of Culinary Arts:

Wiberg Herbs and Spices

I do some work for this company, who offer top quality ground spices for the pro kitchen. Their freeze dried herbs are excellent.

Koppertcress

You’ll probably know this big micro herb company in The Netherlands. They have some interesting new lines. One is called “BlinQ” cress, which has tiny crystals on the leaves like Ice Plant . Others include Motti Cress, which has an unusual intense taste a bit like lovage.

Johnson and Swarbrick, Goosnargh

This small company has been going for three decades, producing fantastic Goosnargh duckling and cornfed chicken – top notch poultry. Their smoked chicken breast is lovely. Other lines include Bury black pudding and game such as venison and hare in season.

Electronic Temperature Instruments 

Their range of thermometers, probes and other gadgets is second to none.
